everyday eating...butternut squash soup...

ingredients: olive oil, chicken broth, butternut squash, 
1 onion, bit of brown sugar, red pepper flakes, salt and pepper

chop the squash into small pieces.  toss the squash with olive oil, brown sugar, 
red pepper flakes, salt and pepper.  roast until brown and tender at 400 degrees.

while roasting the squash slowly sauté the onion...cooking until brown and tender.

add the roasted squash to the sautéed onions.  
blend in small batches, adding the chicken stock to thin.

continue to cook for a bit.
